Mushrooms used to be on my list of top 3 most hated foods. Thankfully, my palate has matured since then. When cooked properly, mushrooms provide tons of nutrients: selenium, copper, niacin, potassium, phosphorous, protein, vitamin C, iron. Fungi of all kinds are a key ingredient in life-changing medicines. It's also vital for helping decompose matter, turning waste into something more useful for soil. What a beautiful metaphor.
